Master Ecailler Knife No. 7 featuring 2.8 x 0.75 in stainless steel blade, forged by master metalworkers in the Theirs region. The strengh of this tool allows you to open all kinds of shellfish such as oysters, shells St Jacques. The ergonomics of the very special wood-grain handle designed for an optimal grip. For context, Ecailler is the old name of Oysters in French (called Huîtres today). It is now the professional label of seafood specialists in charge of preparing seafood plates, skilled in manipulating and shucking oysters and other shell fish. Opening oysters requires skill. The preferred method is to use a special knife (called an oyster knife, a variant of a shucking knife), with a short and thick blade about 5 centimetres (2.0 in) long. Such is the purpose of Theirs’ Ecallier Oyster knife.

Thiers Issard was established in 1884 by Pierre Thiers, (1860–1929). He was part of a family of master razor makers. The Thiers family owned their own forge.The "Chart of the Jurande" or the Professional Guild Charter of the time lists at least three "Thiers" as master razor makers. Thiers-Issard began by making French hand razors of exceptional quality and remains a leading manufacturer of straight razors in Europe to this day. Based in Theirs, the world cutlery-making capital, they are also makers of exclusive and very expensive specialty Damascus steel knives. To this day, they remain among the elite in France's knife making industry: crafting specialty and every-day cutlery. Their oyster knives are made with an emphasis on strength and ergonomics.
